Zucchini Bread

3 eggs
1 cup oil
2 cups unbleached sugar
2 cups grated zucchini
3 tsp vanilla
3 cups unbleached flour
1 tsp sea salt
1 tsp baking soda
4 tsp baking powder
1 TBSP cinnamon
1/2 cup chopped nuts



Mix eggs and oil. Add sugar. Add zucchini and vanilla. Add dry ingredients. Let batter rest for 20 minutes. Grease and flour loaf pans, two large or 3 small. Bake at 325 for about 45 minutes. Mmmmm!!!


For banana bread, substitute mashed bananas for zucchini.
